I know granola is technically healthy, but probably not in the quantity that I eat it. And probably not if you add marshmallows and chocolate chips, huh? Oh well, I did it any way.
We had left over marshmallows from our camping trip, and I picked up some granola and chocolate chips to make this nice little dessert or afternoon snack!
3 tbs butter
7oz jumbo marshmallows (about 3/4 of a bag)
2.5 c your favorite granola—the more clusters the better! (I used vanilla almond)
1/2 c chocolate chips
1. Melt butter in large sauce pan over low heat. Add marshmallows and stir until melted and well-blended. Stir contantanty—burnt marshmallows are no fun!
2. Remove from heat. Add cereal and chocolate chips. Stir until well coated.
3. Press mixture evenly and firmly in buttered inch pan. **Mixture may not spread all the way to corners of the pan. That's totally fine! Jus make sure it's an even thickness.
4. Cut when cool.
5. Chow down!
